What if you're only celebrating one individual's day, or one at a time? FWIW, I think they should leave the apostrophe out altogether.

I can't remember the rule NOW, but my English-major-friend Katie and I had a lengthy discussion over "apostrophe + s" earlier this year, because we were both reading (I think) the New York Times and they used "s + apostrophe + s", and we were confused. So we looked it up and found that one can ALSO use, in most cases, that method. i.e. "James's novels" But we both thought that looked weird.
